Me too, I would rather my bike look a little unassuming or even stealthy.Matte black for me, had a 2021 AT DCT and loved the colour, got a 2022 ATAS and at first I thought it a bit bland looking but once I got the tank pads on it broke up the massive tank sides and now I like it much better than the 2021.
There are lots of guys that have matte black 1000's and they look as good as the day they bought them, at least going by the pics.
As to the white frames on the 2023, no idea if they flake like the earlier ones.
With the state of my joints the most adventure I get is managing to pull on my socks....rufty tufty adventure bike riders whittering on about polish and shiny shiny.

Matte paint finishes are very sensitive to scratches, even paper towel at the gas station scratched my '17 FJR1300 matte silver, that was my last and only "matt finish" ...they are not terrible, but you can't use "regular" car wash, wax, polishing products.
Matt paint requires different products formulated for matt finishes.

As to finish, don't use wax polish or shampoo with wax and you will be fine. As @DoubleThumper says it doesn't need much more than water to keep it looking good and if there are stubborn insect marks then I will use some muc-off matt detailer and a microfibre.
Best of all because it is a primer according to @Dado, it seems to stay where it is applied and doesn't allow the rusty brown stuff through
I suspect the trouble with the fairground colours is you may attract these NuWomen with the extra dangly bits, especially if you drink Bud![]()

Cost me 240 euros and they cover all most every plastic. helps protecting the bike and you'll have a one of a kind bike. Ill share it as soon i got the bike 😀
